What to do now?
Ok they've done everything right so far and the fry are now little discus, but .......
When to seperate mum and dad?
Both are being excellent parents mum is super protective, I can't get within 5 feet of the tank without her having a go at me. Tank cleanings are fun 
What are the kids going to look like? One seems to have all the bars on the back half of it's body. Looks half black, see pic blackie.
What to do with 40 juvenile discus?
LFS maybe. Non local - got a spare tank Adrian? Come see EA's latest Forrest Nev shipment.

Lovely looking parents Nev.
If you have a spare 4ft tank just run it bare bottom with a couple of mature foam filters and heater at about 30C.
Do lots of small feeds daily and small water changes to syphon up the left overs after feeding, and a 50% twice a week. They should grow pretty quickly.
Where are you located? I'm sure you'd get plenty of takers if you advertise them here
