Just wondering what the deal is with the possibilities in cross-breeding. Are the genes co-dominant, if so, does anyone know what percentages are for phenotypes?

lol Scientific questions :)
What traits are you interested in? Some are co-dominant some are recessives. Do you have a specific interest?

Well, for instance, i'm interested in knowing whether solid colour is dominant over striped, and whether a F1 x F1 cross in albinos would produce albanism in future generations.
Also, stupid question, but which is more dominant - red or blue?

Well - geneticist I may be but I don't know much about discus :)
Albinism, however, is a double-recessive character. All progeny of two albinos will be albinos. Progeny of a wild-type and an albino will be wild-type to look at (phenotype) but will be carriers of the gene which may be passed on to future generations.
