Does anyone know if lambs heart is ok to use instead of beef heart i had troubles finding beef heart and could only get my hands onto lambs heart?
I heard it was a little more fatty then the beef heart but still ok to use if trimmed all the fat out?>

I researched recently about the same thing. Everything I read indicated that lambs heart was too oily and should be avoided.
Love to hear if anyone on here has used it though

Most heart is fine as cardiac tissue is the leanest muscle in the body.
I've used turky hearts before, fiddly but the mix worked ok
