Other meat other than Beefheart?

Hi

Is there any other meat products which can be used instead of beefheart? Such as kidney, liver or even lambheart?

Also, any reason why we can't use premium grade lean steak mince?

turky heart works well, lamb heart should be fine we use heart over other meats because the fat content is effectivly 0
