Hello..I am having a very difficult time here in the US finding beef hearts. I have been feeding using beef liver as a substitute for the beef hearts.
Any suggestions as to any other meats that could be used as a substitute for the beef heart?

Turkey heart or chicken heart will do as a substitute, even pig heart. The reason we use heart is that it's a very lean meat, and you can trim all fat and sinew easily.
You don't even have to use heart if you are finding it hard to get. Substitute white ocean fish flesh, prawns, shrimp and vegetable. There are some good recipes in the stickies of this section.

You don't say where you live, but in California at least, your best bet would be a mexican market. Around where I live we have Villarta Markets and they carry beef heart. I only know this because I went looking for it as I am going to attempt my first making of BH in the near future. :) :)
