At the risk of asking a dumb question, after I finish making the beefheart mix how do I feed it to the Discus? Do I just drop some in the tank and let them eat? And my second question is after I make it, how do I store it? Refrigerator or freezer?
Any help you guys can give would be greatly appreciated.

Feezer, use a snap lock bag. Even better if you have some left over bloodworm packs (the little squares) spread it over that so it will mould into little meal blocks.
If you dont have any dont stress just put it in a snap lock bag and cut off what you need.

Hope you've used a binder (like Gelatin) to hold your BHM intact. Else, it'll disintegrate to bits and pieces and may lead to water quality deterioration.

if you don't want to use gelatin you just use lots of prawns and dried foods to hold it together...

If beef heart cannot be located, can lamb's heart be substituted?

Very much! Else, even Chicken heart will do...only thing in this case will be, you need to get more nos. to make a decent quantum of prep.
